Christmas Cookies | Peppermint Icebox cookies

As you might know already, I am a huge fan of food and the holidays. Today, while I was at the store and on Facebook, I saw so many Christmas cookies and holiday desserts. So, instead of complaining or buying cookies, I decided to make a buttload of cookies tonight! Here is one of the 5 different kinds that I made!

Here is the recipe that I used for this particular one:

Recipe:
1c. Butter
1c. Powdered Sugar
1 egg
1.5 teaspoon peppermint extract
2.5c. All Purpose Flour
1t Salt

Step 1: Mix butter and sugar together in a kitchen aid (with the paddle attachment).
Step 2: Slowly add the rest of the ingredients and mix until combined.
Step 3: Separate the dough into 2 portions. Keep one in the kitchen aid and the other portion wrapped up in the refrigerator. Using red food coloring, combine it with the dough still in the kitchen aid and then cover into the refrigerator. Cool until firm
Step 4: Begin rolling out the first dough into a rectangular (about 1/8″ thick). Take out the second dough and roll out until a 1/4″ longer than the first dough.
Step 5: Roll both doughs up like a taco and freeze for 20minutes.
Step 6: Cut dough like a baguette into 1/8″ slices. Bake at 375 degrees for 9minutes. Enjoy!
