For Your Special Valentine- A Homemade Strawberry Custard Sponge Cake

As you know, Valentine’s day is coming up! The only reason I know why: Because my Mama Mia and sister(aka Polly Pocket) get all excited like little girls and decorate the house like there is no tomorrow! It is literally a heart-filled home! I thought that as much as I love receiving love, I’d rather share it! So here is a little bit of my love by sharing my favorite sponge cake recipe!

Recipe:

1/2 c. Granulated Sugar

1/8 c. Honey

1/2 tsp Vanilla Extract

1/8 tsp Salt

3 Eggs, Separated

1/2 c. Cake Flour, Sifted

1/16 t. Cream of Tartar

Decorating:

6 Strawberries, Sliced

1/4 c. sugar

1 c. Whipped Cream (that is placed in a pastry bag or ziploc bag for piping)

1/2 c. Vanilla Pudding  (made instantly from Jell-o)

Step 1: Preheat the oven at 375 degrees. Use parchment to line the bottom of a round 6″ pan. Grease the parchment. In a large bowl, whisk sugar, honey, vanilla, and salt into the egg yolks. Place bowl in pot of hot water. With an electric mixer, beat about 5 minutes on medium speed until pale yellow and double in size. Gently fold in Flour. Image

Step 2: Wash beaters. In a large bowl, beat egg whites and cream of tartar. Beat until stiff peaks form. Using a rubber spatula, fold egg whites into the yolk mixture. Pour into baking pan. Tap gently on the countertop to remove any excessive air bubbles. Image

Step 3: Bake on middle rack of the oven for 35 minutes or golden brown. When done, cake will pull ways from pan slightly. Cool. Remove from pan and wrap in plastic wrap and freeze until ready to use.

Now for the best part: Decorating!

Step 4: Place strawberries in a bowl and add sugar. Toss until combined. Now take out cake out of freezer and place onto desired serving dish. Image

Step 5: Begin decorating the cake by spooning the pudding onto the middle of the cake. Then pipe whipped cream on the outer portion of the cake. Finish layer by placing sliced strawberries to desired specifications. Repeat layer

ImageStep 6: Finish the top with either a dot of whipped cream in the middle or a strawberry!

ImageNow you are finished and can share it with that special someone or a loved family member!

    Couldn’t help notice you finished with both the dot of whipped cream and strawberry. I think I’ll do the same.
